Why roasting freshness is crucial
Roasted coffee gradually loses its aromas after roasting. The most volatile compounds, which carry floral, fruity notes and terroir nuances, oxidize first. After 30 days, the loss is noticeable. After 60 days, what remains in the bean is an impoverished version of what the producer cultivated for months.
Most coffees available in supermarkets or general retailers have been roasted several weeks, sometimes several months, before reaching your home. The roasting date, when it appears on the packaging, is often revealing.
A coffee subscription only makes sense if the beans are roasted at the time of order. This is precisely what the Verlet model allows: each coffee is artisanally roasted in our roastery on Rue de Montpensier, behind the Palais Royal garden, then shipped within a few days.
What a good coffee subscription should offer
Not all coffee subscriptions are created equal. Here are the criteria that distinguish a quality subscription from a simple automated delivery.
The roasting date is important. Coffee must be roasted daily and then shipped quickly to ensure the best aromatic window for consuming your coffee.
The traceability of origin: country, region, plantation if possible. A subscription that sends anonymous blends does not allow you to understand what you are drinking or to develop your preferences.
Custom grinding: a good subscription asks for your preparation method and grinds the coffee accordingly. Espresso, filter, French press, Italian coffee maker: each method requires a different grind, and ground coffee loses its aromas much faster than whole beans.
Flexibility: frequency, grind, possibility to choose your origin or let the roaster decide to discover new selections.

At Verlet, our coffee catalog covers over thirty origins, from the most accessible to the rarest. A monthly subscription could allow you to gradually explore this catalog, starting with the major families before moving towards the most confidential crus.
Our selection is centered around single-origin coffees: a Moka Guji from Ethiopia with floral and fruity notes, a Guatemala with notes of chocolate and dried fruits, a Panama Geisha of rare elegance. Each origin expresses a distinct terroir, an altitude, a soil, a producer's expertise.
The historic blends like Grand Pavois or Haute Mer offer a more balanced alternative, ideal for connoisseurs looking for a consistently great daily coffee.
The rare and seasonal harvests like Jamaica Blue Mountain or St. Helena Napoleon are only available a few weeks a year: a well-structured subscription could alert you to each new arrival.
Whole beans or ground coffee: what to choose for a subscription?
If you have a grinder, opt for whole beans. Whole beans retain their aromas much longer than ground coffee, which is particularly important for a monthly subscription where a bag might last several weeks.
If you don't have a grinder, have your coffee ground to order according to your brewing method. At Verlet, we custom grind: tell us your equipment and we will adapt the grind accordingly.

Each shipment is prepared in our roastery and then sent from Paris, with the option to view, modify, or suspend your subscription at any time from your customer account.
